full you are when the meal finishes, most of us can find that little bit of space, if only for a spoonful of dessert.

The store’s retro powder blue and white booths and vintage memorabilia reference not only their father’s bar but also the value of whole food. Their ice cream is made with old school goodness using local Norco Scenic Rim milk with no artificial additives or stabilisers to make their range of over 50 unique ice cream flavours and milk shakes. Their flavours range from dark chocolate and orange ice cream to lemongrass vanilla ice cream with tropical fruit, each dessert plate styled as a Masterchef creation. 3. Inspired by a restaurant they fell in love with in Scotland, hospitality veterans Angela and Mark Naoum returned home to Ipswich and bought Darver Cottage, an 1861 heritage-listed building, to house their first restaurant. Although Indian and ice cream are not words we’d automatically put together, kulfi is a delicious traditional Indian dish, denser and creamier than ice cream. Chef Sam Siddharath has been experimenting with Indian fusion cuisine for several years and finally, after more than 15 attempts, he succeeded in making a delicious activated charcoal ice cream. Sam’s charcoal kulfi is rich and creamy with caramelised toffee notes and a slightly grainy texture. It’s a must try cultural experience. 6. Little Mode Cupcakery Ipswich When it comes to cupcakes, Irene McCudden really takes the cake. Not only are her cupcakes pretty, but they’re also the best we’ve tasted. Moist and full of flavour, each cupcake wears its own hat of icing, some with extra decoration on top. “It took me more than six months to perfect the recipe,” Irene tells us as she hands out mini size cupcakes for free to first-time customers. Turkish Delight, Rocky Road, Iced Vovo, Pink Lemonade and Choc Mint are just a few of the 50 flavours Irene has created. Cupcakes can be bought individually with a cup of tea or coffee, or by the box.

Coal roasted pork collar with pork fat emulsion, davidson plum

Recipe

Pork fat emulsion ¼ cup salt 1kg pork back fat Pinch salt Pinch pepper 500ml water, room temperature Rub the ¼ cup of salt onto the pork fat. Rest for approx 2 hours. Roast on high heat until all the fat has rendered. It should taste like salty roasted pork. Cool to room temperature Place the pork fat, the pinch of salt and pepper into the blender then blitz. Slowly add the 500ml water until it has emulsified and formed a soft and silky dressing. To serve Slice the coal roasted pork collar. In a bowl, place 1 tablespoon of the Davidson plum dressing. Top with a slice of the coal roasted pork collar. Cover the pork in the pork fat emulsion. Garnish with Davidson plum crisps.

Pork brine and roasting 10 cups cold water 5 cups table salt 5 cups brown sugar 5 sprigs thyme 2 tsp black peppercorns

Davidson plum 1kg Davidson plum 500ml water, boiling ¼ cup icing sugar Blanch the plums in boiling water for 20 seconds then refresh in ice cold water. Peel the skin off the plums and remove the seed. Place plums and icing sugar in a blender then blitz until smooth. Spread 1 cup of the Davidson plum dressing onto parchment paper. Place into a dehydrator or very low oven until crispy. When cool, break into small shards. Note: Any variety of plums can be used however the icing sugar may need to be adjusted to taste.

2 tsp whole cloves 5 cups apple cider 5 cups apple juice 3kg pork collar Heat water, salt and sugar until the salt and sugar have dissolved. Add the thyme, peppercorns, cloves, cider and apple juice then place in the fridge until cold. When cold, add the pork collar ensuring it is completely covered. Leave to brine for 24 hours. Place onto a spit or coal grill for 6 hours until the pork is tender. Allow to rest before carving.

Ipswich could well be the home of the burger in Queensland.

As drovers pushed their mobs north from NSW and west into Queensland, they must have stopped along the way for dinner and a nap, allowing the cattle time to rest. There’d be no better meal than that already on hand, barbequed over an open fire and stuffed between two chunks of damper. Those burgers are still in evidence today, with every decent joint in the Ipswich area showing off magnificent burgers of which their forebears would be truly proud! We’ve rounded up a range of the best to share with you, given them the taste test and our tick of approval. 1. Pumpyard Bar and Brewery from 417 reviews. There’s no better place for a tasting than the Pumpyard Bar in the historic 88 Limestone St complex. The bar, surrounded by shining brew tanks, serves a full menu of favourites including pizza, share plates and burgers. For many, a burger and beer is a combo made in heaven. The Pumpyard Bar offers several burger options including burger-sized bao stuffed with pork or tofu and their signature Pumpyard special. We choose the Southern fried chicken burger, the bun filled with seasoned crispy fried chicken breast, lettuce, tomato, Swiss cheese and pickles with chipotle mayo to accompany a glass of the tropical

tiles and white counter fronts, the venue is inviting, a sassy Hey Sugar winking neon from one wall. On a short but well-priced menu, the Bakehouse Cheeseburger features house- ground premium steak, Gillies bacon, cheese, pickles, lettuce, tomato, caramelised onion, Bakehouse sauce and bottomless fries. You can also get the burger gluten-free. Leave room for some sweets from the dessert corner, the flurry machine crunching up treats like Maltesers and Violet Crumble with ice cream to make soft serve treats. 3. Tap’d, The Prince Alfred (PA) Hotel from 11 reviews. Dating back to 1842, when it was a two-storey timber hotel surrounded by cotton fields, the Prince Alfred is today an award winning restaurant and bar. With three main dining areas under one roof including Tap’d, the largest bar in Queensland boasting 72 taps, each one pouring a different craft beer, the beer theme extends to keg light fittings and a spectacular greenery-fringed tap waterfall and wine barrel booths. Burgers are presented on ciabatta rolls with fillings of slow-cooked brisket or 7+ wagyu steak. There’s even a hunger-busting veggie roll with a sweet potato and bean patty, salad, cheese and aioli served with a side of chips. Gluten-free and vegan versions are also available.

from 11 reviews. There’s no greater hunger busting burger than the Retro Diner’s Carnivore challenge. Close to a foot tall, the burger itself is a construction feat, held together by one big long flamingo skewer. First, Angie and the girls make the burger with a huge beef patty, salad, beetroot, egg, cheese, steak, bacon, chicken schnitzel and a stack of onion rings piled into a bun. Then there’s the thick shake with almost a litre of ice cream, as well as a huge basket of fries. Down the lot in 10 minutes and the shirt and honour is yours. Odds aren’t good, with only three out of 40 contestants succeeding so far.

Tranquil Tea Tea educator Dona Perera knows her brew. Having grown up in Sri Lanka, she’s been enjoying beautiful tea since childhood and believes in its ability to relax and delight, and to bring people together in conversation. Ms Perera said tea has been a drink of choice for people all over the world for 150 years. She started her Tranquil Tea importing business to re-ignite her passion for the traditional drink and specialises in importing black and green Ceylon tea from Sri Lanka as well as infused teas with fruity and spicy flavours. “I love tea,” she said. “You can add it to red wine and make a cocktail, cupcakes and perfumes and you can use it to flavour meat. It can be used at any time of the day for any event.” She offers tea experiences designed for those interested in learning more about this time-honoured drink and its health benefits. Ms Perera imports single estate black teas from Sri Lanka and also offers some blends, including a wonderfully fragrant chai, under her own Tranquil Tea brand. You’ll find a range of teas uncommon in Australia such as the pomegranate tea which features a pure single origin Ceylon tea infused with the fruit as well as hibiscus flowers and rose petals. 8 Gorgeous churches to see in Ipswich Beginning back in 1827, Ipswich once aspired to be the capital of Queensland, leading to some of the oldest churches in the state, mansions, historic houses and cottages being built here. Here’s some of the churches included in Ipswich heritage trails.

History and heritage on show If you’re after more history take a trip out to the Cooneana Heritage Centre , which is home to the newly restored Cooneana Homestead . The 150 year old house showcases newspaper print that was found on the walls that dates back to 1874 as well as Victorian era wallpaper. At the heritage centre there is also a historic mining and machinery shed, blacksmith workshop, the Ipswich Spinners and Weavers, and the Ipswich Genealogical Society. Plan to spend a few hours wandering the history preserved by the Ipswich Historical Society including images of Ipswich Past and a collection of historical motorcycles. The church was constructed in 1889 but the pipe organ is believed to be much older as it came from the original Methodist Church located in Albert St, Brisbane.

Ipswich has a long history of rail. The first train to run in Queensland set off from The Workshops – as they were called – to what is now known as Grandchester over 100 years ago.

For decades The Workshops were the centre of rail construction, maintenance and technology for Queensland’s rail industry. Thousands of workers constructed hundreds of trains right here in Ipswich. Now Ipswich remembers that past by bringing the romance of rail into the modern era – find out how you can re-live the past too.

the opportunity for a mountain biking adventure more focussed on the journey than the destination and with over 2,000 hectares of conservation estate to explore. This beautiful expanse of land is situated between the Flinders Plum Picnic Area and Hardings Paddock Picnic Area and campground, with accessibility from each. It’s a terrific opportunity to press through a series of peaks and valleys along some of our most extreme topography, extending a full 19 kilometres in one direction. Grab a friend, drop a car either side and set off on an adventure right through the heart of some of the best-preserved dry vine bushland in the region. There’s also a number of circuit options available from the Hardings Paddock side of the estate. For unparalleled views of the tallest peaks in Greater Brisbane, leave the bike and take one of the walking trails. 4. Castle Hill Blackstone Reserve A mountain biking wonderland that’s no less than perfect for tearing up over the weekend. There’s 15 kilometres of track running through an assortment of difficulty levels and consequently, it’s a totally unique location that can satisfy a range of skill sets. What sets Castle Hill apart from the rest is its menu of International Mountain Bicycling Association classified trail options, tightly woven within a compact area, allowing for a single group to split off into individual sections and reconvene at any given time. It’s a highly versatile experience, adaptable to any number of circumstances and all within shouting distance. The hilly, rocky terrain will make you work for every single metre.

Our recommendation for this one is the 500 and above trail at the very back of the park, which sees visitors greeted firstly by the rugged mountain scape of the Scenic Rim, before wrapping around to stunning views of Grandchester, Ipswich and the skyline of Brisbane. It’s truly an experience to behold. Just be sure to catch a ride in with the boys from the front desk, or it might be a bit of a tough one getting there.

A little bit different to our first location on this list, White Rock offers a welcome change in atmosphere, away from the thrill of the ride and more towards the journey itself. At this location you can expect much more gradual crests and falls, stretching high up into the ridgelines and then back through the deep valleys of low lying swampland in between. Prepare to cover significantly larger distances whilst transitioning though a collection of different biomes along the way. The estate is a unique location, a single trip can encompass everything from paperbark flats, through to dry sandstone peaks, laden with red soil and clusters of volcanic rock. 3. The afternoon light fades and the excitement begins to build as people arrive and gather in the meeting area. Some familiar faces, a few strangers and the trusty guides dot the shelter under which the journey begins. This is the staging ground for an event that has been met with much enthusiasm and unlike anything else on offer in the area. This, is a Moonrise Walk at White Rock – Spring Mountain Conservation Estate.

The closing minutes of our stay are spent watching as the moon crests high into the sky, showering the bush in dappled light. And so we head back, fixing headlamps and assembling our line. Our surrounds have transformed into something entirely different and eyes flash all around. Torches catch the silvers of spiders scampering down holes, slamming their tiny doors behind them and the tree tops bustle with hoots and cackles, as great owls hunt and flying foxes forage. After some time, slowly but surely, we return from whence we came. Tired, but content, weary but satisfied, and ready to do it all again next month. Each month, coinciding with astrological events, a group of lucky hikers venture out in anticipation. Under the careful supervision of myself and Ranger Jody, we descend into a labyrinth of twists and junctions amidst thickets of wildflowers and towering Queensland Blue Gums – creeping ever further towards our terrestrial theatre, from which the show will begin. The aim this evening, isn’t simply a wander in the woods. Oh no... tonight, we have the opportunity to witness the bush in a whole new light. As we walk, bluffs and boulders blend their detail into silhouettes of dusk and eager chatter gives way to the sombreness of night. Wallabies stir from their grazing to keep watch and twilight marsupials dart to evade the gaze of predators above.

The path ahead is laced with relics of Australia’s wartime past, clusters of stone revealed as the gun pits of the soldiers that once walked these grounds. And further still, a century-old tree stands war weathered and alone – too bullet-riddled to be logged. But, the true reward is yet to come. Awaiting atop a ridge, after an ascent through the forest, we emerge into a clearing overlooking the surrounding area, with views stretching from Springfield below, to Mount Coot-tha in the distance and even the runways of RAAF Base Amberley in the north west. The city lights of Brisbane twinkle and a faint drone of traffic dissolves into the busy whispers of the forest around. Then at long last, emerging above the horizon as the final rays of sun
